- My brother made a dish using macadamia nuts to bread halibut.
It is wonderful. Here
are two methods I have used. Dry
the fish well before dipping. Don't
chop the nuts too fine. Very
finely chopped nuts lose the fresh nutty taste.

- Coarsely crush or chop macadamia nuts.
Beat an egg (and add a little lemon juice if you wish.)
Dip fish in egg, then fry in oil at medium heat until fish is
white all the way through.

Mix with a little flour (and orange or lemon zest if you wish.)
Dip fish in milk, then in nut/flour mixture.
Fry in oil at medium heat until white all the way through.
