MACADAMIA HALIBUT
My brother made a dish using macadamia nuts to bread halibut.  It is wonderful.  Here are two methods I have used.  Dry the fish well before dipping.  Don't chop the nuts too fine.  Very finely chopped nuts lose the fresh nutty taste.
 
Coarsely crush or chop macadamia nuts.  Beat an egg (and add a little lemon juice if you wish.)  Dip fish in egg, then fry in oil at medium heat until fish is white all the way through.
 
Or
 
Coarsely crush or chop macadamia nuts.  Mix with a little flour (and orange or lemon zest if you wish.)  Dip fish in milk, then in nut/flour mixture.  Fry in oil at medium heat until white all the way through.
