ALMOND CHICKEN SALAD
1 skinless chicken breast
1 bay leaf
2 branches (2 Tbs.) parsley
1 green onion
1/4 cup almonds, coarsely chopped
1 Tbs. mayonnaise
1 tsp. turmeric
1 tsp. lemon juice
salt
 
Steam chicken breast with bay leaf, 1 branch or Tbs. of parsley and green onion on top.  When cool, discard spices and cut chicken into bite size pieces.  Add almonds.  Mix mayonnaise, turmeric, lemon juice, 1 Tbs. finely chopped parsley and a dash of salt.  Mix chicken and almonds with "sauce".
