CREOLE CHILI
This is my mother's recipe.
 
1/2 cup chopped onion
2 Tbs. margarine
1 lb. ground chuck
2 1 lb. cans kidney beans
2 1 lb. cans tomatoes
1 6 oz can tomato paste
1 1/2 cups water
1 cup chopped celery
1 cup chopped green pepper
2/3 tsp. chili powder
1 1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1 bay leaf
dash of Tabasco sauce
 
Fry onion and meat until meat browns.  Using only 1/2 of the celery and green pepper add rest of ingredients.  Simmer for a least one hour, adding rest of celery and green pepper half an hour before serving.  Freezes well.
