- This is one of my mother's old recipes.
It resembles a pound cake in texture. I don't make it as often as
some recipes because grinding the fruits is a bother, but it is worth it.
-
- Grind -
- 1/2 cup nuts
- Rind of 1 orange
- 1 cup raisins
-
- Blend -
- 1/2 cup butter
- 1 cup sugar
-
- Add -
- 1 tsp. vanilla
- 2 beaten eggs
- Ground fruit
-
- Mix in -
- 1 cup sour milk (milk with 1 tsp vinegar)
- 1 tsp. soda (in the sour milk)
-
- Alternating with -
- 1/2 tsp. salt
- 2 cups flour
-
- Bake in a loaf pan at 350° for around an hour, or until toothpick comes
out clean.
-
- I don't normally frost this cake, but you can glaze it with powdered sugar
mixed with orange juice.
- Another glaze for the cake is:
-
- Boil -
- 1/2 cup sugar
- 1 tsp. cornstarch
- dash salt & cinnamon
- 3/4 cup water
- Add:
- 2 tsp. butter
- 1 tsp. grated orange rind
-
- If you do use a glaze apply it while cake is still warm.
