ORANGE CAKE
This is one of my mother's old recipes.  It resembles a pound cake in texture.  I don't make it as often as some recipes because grinding the fruits is a bother, but it is worth it.
 
Grind -
1/2 cup nuts
Rind of 1 orange
1 cup raisins
 
Blend -
1/2 cup butter
1 cup sugar
 
Add -
1 tsp. vanilla
2 beaten eggs
Ground fruit
 
Mix in -
1 cup sour milk (milk with 1 tsp vinegar)
1 tsp. soda (in the sour milk)
 
Alternating with -
1/2 tsp. salt
2 cups flour
 
Bake in a loaf pan at 350° for around an hour, or until toothpick comes out clean.
 
I don't normally frost this cake, but you can glaze it with powdered sugar mixed with orange juice.  
Another glaze for the cake is:
 
Boil -
1/2 cup sugar
1 tsp. cornstarch
dash salt & cinnamon
3/4 cup water
Add:
2 tsp. butter
1 tsp. grated orange rind
 
If you do use a glaze apply it while cake is still warm.
